The doctoral Fernando Figueroa UCAM presented in the thesis 'phenolic composition, lipid, and antioxidant activity in vitro bioavailability of 10 genotypes of nuts grown in the region of Murcia'.
The thesis, under the Department of Food Technology and Nutrition, is directed by Drs Begoña Martinez and Juana Mulero.
According Juana Mulero, the main contribution of this thesis is that "evaluates the nutritional quality of ten different genotypes of finding that all nuts have a high content of phenolic compounds and high antioxidant activity. Additionally all varieties tested have a Omega fatty acid profile 3/Omega 6 which confers a lipid profile suitable for maintaining cardiovascular health. "
