The expert, who has ruled the conference 'The role of EFSA in the Food and Nutrition Security' in the framework of the Days Market, Economics and Innovation in Food 2011, sponsored by San Antonio Technologies, explained that this body born following the outbreak of the so-called 'mad cow' crisis', whose main objective is to guarantee and ensure the safety of the food chain and the European consumer.
Sanz Yolanda explained that the Authority is a legal entity separate from the other EU institutions, dedicated to providing scientific advice to the European Commission all matters that directly or indirectly, compromise food security.
"We monitor all stages of food production, from source development process until the arrival of these food products to consumers, collect information and analyze new scientific developments, to identify and assess risks that compromise safety the food chain. then characterize them, determine their presence in the food chain, we measure the exposure rates in different population groups, and establish tolerable levels of intake. "
Sanz has also ensured that the Authority has the ability to conduct scientific assessments on any issues which might affect one way or another to food safety or welfare of animals and plants, and recalled, in relation to its legal dimension, the important work of scientific advice developed by the agency in all areas related nutritional one way or another with the current EU legislative universe, responsible for regulating the food sector.
