The Department of Commerce, Organization and Institutional Relations, directed by Maruja Pelegrín, through the veterinary inspectors of the Consumer Inspection Service, is the one that assumes in our municipality the surveillance of the final section of the food chain with the objective that its fellow citizens acquire and consume healthy, healthy and safe food.
The sanitary controls are carried out on the activities of commercialization and direct service of food products to the consumer.
We visit permanent establishments (collective catering, retail stores, supermarkets and stalls of municipal supply plazas) and regular seasonal establishments such as those that are installed in local festivities and festivities of districts and neighborhoods, ice cream kiosks of the summer season and the stalls that supply fresh products in the 54 weekly markets that are distributed throughout the municipal geography.
It also addresses those events that are held on an occasional basis and include the sale of edible products such as themed markets, music festivals, without forgetting the extraordinary sanitary controls that are carried out in special campaigns such as Christmas.

There is a strong emphasis on compliance with mandatory labeling requirements to preserve the consumer's right to be informed in a precise, clear and truthful manner about the characteristics of the food, its composition, duration and place of origin.
In addition, they are asked to have the means to know the traceability or origin of the raw materials with which they work, in such a way that in the event of a problem, all the operators in the food chain that have intervened in the elaboration of this problem can be identified. product.
Balance of the past 2016
During 2016, 1496 establishments were inspected ex officio, of which 482 were collective canteens and retail stores, 210 outlets in the eight municipal supply plazas, 402 outlets in the fifty-two weekly markets and some 400 seasonal establishments located in the via public occasionally as thematic markets and other events with food tasting that are almost always held on weekends coinciding with the patron saint festivities of neighborhoods and districts, music festivals, commemoration of international days and local festivals, etc.
In addition, every year some 181 non-permanent establishments are visited that are installed periodically at local festivals.
During the Spring Festival, the 40 or so barracks that are distributed throughout the city are inspected (43 in 2017).
Likewise, at the September Fair, the 16 Gardens are inspected, the 24 stands of the Wine and Gastronomy Fair, the 46 stalls of the Fairground, the 13 of the Medieval Market of the Moors and Christians and the 39 in the Pilgrimage of The Fuensanta.
