The Catholic University of Murcia, through its Chair of Entrepreneurship in the Agri-Food Field, has presented the results of a research carried out by the Chair itself along with the degrees of Nutrition, Food Technology and Gastronomy, which shows the benefits of the Murcian garden products both for health and in the field of gastronomy.
"What we have done is to value the products grown in our garden", explained Antonio Cerdá, director of the Chair.
Among the benefits of pepper is its anti-cancer and antioxidant activity thanks to its content of capsanthin.
In addition, the consumption of pepper prevents cell aging and the development of numerous diseases, and its bioactive principles favor diuresis and the elimination of toxins, and contribute to protect the eyes, the digestive system and cardiovascular health.
Regarding broccoli, of which the Region of Murcia is the largest exporter in Spain, the protective effects against cancer of the lung, prostate, breast, endometrium, uterus, stomach, liver and colon stand out.
It has also been able to detect its antioxidant capacity and its benefit for pregnant women thanks to its folic acid content, since a deficiency in this vitamin can lead to a baby with spina bifida.
About this study, Estrella Núñez, Vice Chancellor of Research of the UCAM, has also highlighted "the amount of vitamin C and other beneficial components it has for health that maybe the population does not know".
Also related to this study, the Degree in Gastronomy of the UCAM has designed a menu with products from the Murcian garden as protagonists of the same to present this research through a show cooking, which has taken place in the Gastrolab of the Campus of Los Jerónimos.
